I can hardly believe that Cinco de Mayo is coming up in less than TWO weeks! Cinco de Mayo is my unofficial kick-off to summer. Here in Sacramento, it’s already warm if not HOT. By mid-May we’ll have hit 100. It’s inevitable. I absolutely have to cool off and I think I’ve found my new favorite way to do so.

I’m feeling this mojito like no other. I love mojitos. Always have. I’m more of the fruity cocktail drinker and rum has always been my alcohol of choice. That being said…you could totally make this a mocktail if you wanted to. Omit the rum and add a teaspoon of rum extract to each drink OR omit entirely and add in some lemon-lime soda or more pineapple juice to finish it off.

So what do we need to make this glorious cocktail? Fresh strawberries, pineapple, mint leaves, limes, sugar or simple syrup, and your choice of club soda, sparkling water or even lemon-lime soda.

I like my drinks on the sweet side. I thought that the pineapple juice was going to be sweet enough for me but I found that I really like it better with the addition of the simple syrup. You don’t need a lot – a tablespoon goes a long way to making this cocktail perfectly sweet and refreshing.

It starts with a little bit of muddling. Now I’ve talked a bit about muddling before. You don’t want to pulverize the mint leaves and fruit. You want to extract all the juice from the fruit and oil from the mint leaves and to do this you don’t need to break them down until they are unrecognizable. Use a muddler or the handle of a wooden spoon to press down and squish the fruit and mint leaves together until the all the juice is all released and the mint leaves have been pretty well crushed.

Now it’s time to add in the rum, pineapple juice, club soda, and simple syrup to the mix. I like to give it a stir and then garnish with a lime slice and fresh mint leaves.

Almost forgot! I have a quick trick to keeping your cocktail perfectly chilled and undiluted – frozen strawberries! I absolutely canNOT stand diluted cocktails and sometimes when you’re talking to friend or enjoying the sunset, you don’t want to necessarily gulp down your mojito, you want to enjoy it.

The frozen strawberries are the perfect way to keep your cocktail chilled AND they add so much beauty to the drink as well. I love seeing the frozen strawberries floating in my drink instead of ice cubes. It’s a nice touch if you’re having a party for sure!

Ingredients

  • 8 strawberries trimmed hulled, quartered
  • 8 pineapple chunks fresh is best but canned will work too
  • 20 mint leaves plus more for garnishing
  • 1 lime quartered
  • 1/4 cup simple syrup
  • 8 oz pineapple juice
  • 8 oz light rum
  • 8 frozen strawberries 8 to 12
  • soda water club soda, lemon-lime soda

Instructions

  • Divide strawberries, pineapple chunks, mint leaves, and lime quarters evenly among four glasses.

  • Gently muddle the fruit and mint leaves until all the juice has been released from the fruit.

  • Add 1 tablespoon of simple syrup, 2 ounces of pineapple juice, and 2 ounce of rum to each glass. Stir together. (Optional: Strain the muddled fruit and leaves if you'd like.)

  • Add 2 to 3 frozen strawberries to each glass and top with club soda.

  • Garnish with fresh lime slices, strawberries slices, pineapple slices, and/or fresh mint sprigs.
